Sunday Supper: Mexican Lasagna

This is another adaptation of a NuBites recipe. I love making it from scratch, but that does require much more time. So this can be quick and easy, or completely homemade–your choice!

You need:

12 lasagna noodles, cooked
2 lb refried beans (or 1 lb beans and 1 lb ground beef)
1 jar tomato sauce (or the equivalent, home made)
1 onion, chopped
2 cups shredded cheese
Salsa
Sour Cream (optional)

Layer the noodles, beans, tomato sauce, onion, and cheese in a lasagna pan (or oven-safe saucepan!). Bake 1 hour at 350 degrees. Top with salsa and sour cream.
