Sunday Supper: Lasagna Rolls

Once again, this is my variation on a Nubites recipe from Beanie’s preschool. This is a fun way and easy way to make lasagna
and your little one can help! My directions include tips for making this in a minimalistic kitchen such as my own, with only two (oven-safe) pans.

You need:
12 cooked lasagna noodles (you can use homemade, of course!)
1 jar (26 oz) spaghetti sauce
1/2 cup ricotta cheese
1/2 cup shredded cheese (I like Colby!)
1/4 cup parmesan cheese
1/2 cup cottage cheese
Grated veggies (whatever you have in your fridge!)

1. Combine cheeses and veggies in a bowl (or cup, or cast iron skillet).
2. Place 2 spoonfuls of cheese mixture on each noodle and roll up.
3. Spread 1/2 cup of spaghetti sauce in the bottom of a baking dish (or cast iron saucepan!). Cover with remaining spaghetti sauce.
5. Bake at 375 degrees for 30 minutes.
