Sunday Supper: End of the Week Tomato Soup

I am trying to buy groceries once every other week, and I want to cut down on food waste. That means that my fridge gets pretty empty sometimes.

Last Thursday, I found some inexpensive crackers for the Bean. They were hard and tasted like bird seed. “You know what these need?” Rob asked. “Tomato Soup!”

So, I opened the fridge. We had 4 romas, 1 zucchini, 1 onion, and some cream for a quiche I never got around to making.

I chopped up the veggies, added 2 cups of water, and simmered them until they were mushy. Then I added lots of basil and oregano, salt, dried mustard, and a little bit of dill weed. I added water as needed. Finally, I poured in the carton of cream.

The end result was the best creamy tomato soup any of us had tasted!
