We like low-glycemic. We like to eat veggies that aren’t just starch. So, this is one of my favorite recipes.
1. Cut up a head of cauliflower.
2. Steam it for a few minutes, until it’s mushy. Be sure to put a lid on the pan!
3. Puree the cauliflower. Add butter and milk (or half and half), until it reaches the consistency of potatoes.
4. Feel free to add garlic salt, cheese, sour cream, chives, or any other flavorings that you would use on mashed potatoes.
