Sunday Supper: Cashew Salad

This is a family recipe, that Rob’s mom liked to make for the holidays. It’s a yummy, healthy recipe that’s easy to make!

For the salad, you need:

3 heads Romaine chopped
1-2 cups cashew pieces
1-2 cups shredded Swiss cheese
1 small onion, finely chopped

For the dressing:

1 cup Mayo (homemade with peanut oil is excellent for this!)
1/2 cup Stevia in the raw
1/4 cup white vinegar
2 tsp dried mustard
1 tsp celery seed

Mix the dressing and apply to salad right before serving.
